Sopaipillas by Ron Viramontes

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
3/4 cup water
2 cups vegetable oil for frying

Directions
In a large bowl, sift together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Using hands, mix in water to make a smooth dough. Knead lightly on a floured surface. Cut dough into 12 pieces, and shape into round balls. Cover, and set aside. Let stand about 20-30 min.
Heat oil in deep-fryer to 375 degrees F (190 degrees C).

On a lightly floured surface, roll dough into thin circles. Cut each circle into triangles. Fry in hot oil, until golden brown, turning when dough puffs. Remove, and drain well on paper towels.

This sounds good. I learned from a woman who instructed by way of saying, Put some flour in the bowl, add this and that. She used her hand as a measuring device. I kidded her that I was going to make a mold of her hand to meansure.

Sounds like "gramma recipes"...which explains why "ours" never turns out as good as "theirs." I just finished a double batch of biscochos (her "recipe" but still not exact.

My family's sopapilla masa is made w/ the same ingredients
but we add sugar to the mix as well...its the only difference
from my family's tortilla masa mix...I can't call it a recipe
because non of us measure out a darn thing...lol
I love introducing Californians to "New Mexican" dishes...
Its always a blast to watch them delight in the "puffing up"

Thanks Ron for sharing this. It is precious the things we learn from our parents and grandparents. My mom never measured either. She said it was by look and feel. I have not mastered the look and feel when it comes to her recipes, but I am still working on it.

I am going to be trying this recipe out tomorrow....I have lived in New York for 6 years now and my girls are always talking about sopapillas and asking their grandma in New Mexico to send some to them. They will be very surprised with these tomorrow.

I inherited my grandma's "tortilla bowl" because I would watch how much flour she'd put in and go from there. The above recipe is a good one.
