| 5lbs. Roasted, Peeled and Seeded Green Chili (not canned)
2.5lbs. Country style pork ribs w/o bones
4 tble spoons of vegetable oil
1 sm white onion finely chopped
3 sm cloves of garlic finely chopped
1/2 cup flour
2 qt chicken stock
possible 2 cups of water to thin (if needed)
salt and pepper to taste
heat oil in large stock pot
chop pork into 1" cubes and brown until 80% of the way cooked
add chopped onion and garlic and cook down
add flour to make rue and cook until flour raw flour taste is gone
add chicken stock and bring back to a boil
reduce heat to simmer allow to thicken
add chili's and allow to incorparate
let simmer for 30 minutes
remove chili except pork and add to blender or food processor until chili is smooth (all onions, garlic and chilis are a smooth consistency)
return to pot and bring back to heat while incorperating with pork
heat and serve
This makes a great chili sauce to smoother enchilada, burritos, serve on the side with taquitos or serve on its own in a bowl with warm flour tortillas
