ROSITA’S FAMOUS CHILI CHEESE SQUARES RECIPE
10 EGGS
½ CUP FLOUR
1 tsp. BAKING POWDER
PINCH OF SALT (OPTIONAL)
1 tsp. OF GARLIC POWDER or 1 tbsp. CHOPPED GARLIC (BETTER)
½ CUP MELTED BUTTER
1 13oz. CONTAINER OF CHOPPED GREEN CHILI
1 PINT OF SMALL CURD COTTAGE CHEESE
1 POUND OF MONTERY JACK CHEESE (shredded)
1 CUP SHARP CHEDDAR CHEESE (shredded)
PRE-HEAT OVEN TO 400 DEGREES FERINHIET
In separate bowl mix together melted butter, salt, baking powder, garlic, green chili & set aside.
In a large bowl, beat eggs slightly until all yolks are broken in.
Stir in flour until consumed. Don’t worry about lumps.
Add pre-mix ingredients, then all cheeses and mix until all appears even. (Don’t over-mix)
Pour mixture into greased large shallow baking dish.
Bake at 400 for 15 minutes, then drop temperature down to 350 and bake for an additional 40 minutes or until golden glazed on top. Let cool slightly, and then cut into squares. Better if served hot, but always good anytime! For a twist, next time try adding a cup of diced ham and sliced black olives. Anything goes!
You can also pour mixture into a pre-made pie crusts for a nice Quiche! |
