This is the recipe I'm currently using. As it is much easier to ship the powdered form of the red chile pod as opposed to the dried whole chilis (which I prefer) but it is still delicious.
First you need your red chile powder (Which comes de-seeded, de-stemmed, and oven roasted-which I think doing this yourself is half the fun)
You then get 2 tablespoons of vegetable oil and 1 tablespoon of olive oil and heat over medium flame.
Add 2 garlic cloves finely minced, stressing "finely" and 3 tablespoons flour(you can add extra if you prefer a thicker sauce but not too much as it would need more oil to brown). Constanly stir this mixture til it begins to turn a golden brown. Be careful as this happens quickly and it will burn if you don't pay attention.
Then add about 5 heaping tablespoons of your red chile powder, the hotter the better!
Quicky add 2 and 1/2 cups water to the mix and then sprinkle 1 teaspoon of salt.( I use half table salt and half garlic salt)
Simmer for around 15 minutes stirring quite often as it tends to stick to the bottom and form clumps if you don't.
You can add more water as you go along depending on the desired viscocity of your sauce. Makes around 2 cups.
This forms an awesome aromatic thick red chile sauce! Great for frito pies or basically good on anything in my opinion. (And if you don't know what a frito pie is...then you're really missing out!)

Antonio - your red chile recipe is much like mine, except recently I've begun using 1 can of chicken or beef broth in place of 1 cup of water, and it sure makes the chile even better!

Marty: Frito Pie is just Fritos in a bowl with lots of chile poured over them. It is topped with diced onion, tomato and grated cheese....so yummmmy. The "original" frito pie from Woolworths on the plaza in Santa Fe was served in the lunch bag sized bag of Fritos with the chile poured right in and you put the toppings on yourself. Great tail gate food....no plates or bowls needed.

I know the NM Magazine site has alot of recipies on there that you can print off. The red chile is is just the basic one that was on this site but I make mine with some hamburger or little chunks of beef or pork or even better is a mix of the two. Ladel over fritos and add some chopped up tomato and onion and pile on some cheese. Now I am hungry....good luck with yours.

MMMM Frito Pie!! Gonna have to try this sauce on it! We do FP alot at our house. Usually just use taco mix and sauce. We DO add green chili though!!!
