Carrot Soup

500ml Veggie stock
Approx. 8 carrots cut into large pieces
1-2 small potatoes cut into large pieces
1small onion diced
1 Tablespoon oil

Heat oil in saucepan
Cook onion off till translucent
Add carrots and potato
Stir approx 2 minutes
Add stock
Bring to boil, then reduce heat and simmer till carrots tender.
Remove from heat and blitz with blender till smooth
Soup will thicken on standing
