In the pet description all benefits are written. You can buy any pet you need to get a bonuses. For example Dolphin brings additional 10% XP and 10% of cons, so if you sell seahorse through Dolphin you get 9680 XP and 220000 coins.

I'm sorry, I didn't explain properly. I do understand that each pet has its own specific benefits. What I don't know is, after a pet reaches level 11, is it within the rules to buy a "replacement" pet (with its own specific benefits) for that tank?  Can I sell a level 11 pet and put a new one in that same tank, of course with the specific benefits that come with the new pet, and can I replace pets indefinitely?

Any pet you want you can buy as many times as you want in any tank, unless there is a pet in the tank already. Only one pet per tank.
