A favorite of family and friends in Las Cruces, NM:

1 dozen corn tortillas
1 can Cream of Chicken Soup
1/2 cup Green Chile, chopped (more if desired)
1/2 lb Cheddar Cheese, grated
1 tall can of evaporated milk
1 onion, chopped
1 lb ground beef, shredded beef/pork/chicken

Fry tortillas in oil to soften, drain on paper towel and set aside. Fry up meat in large frying pan. Add soup, evaporated milk and the green chile. Stir well. In rectangular cake pan, place in layers: tortillas, chopped onion, grated cheese, meat mixture. Repeat. Top casserole with cheese and additional green chile.

Bake at 350 degrees F for about 30 minutes.

Yes, that is so yummy, I've made it that way for years, then we started adding salsa and sour cream, now that is even yummier!
