Mashed Potatoes with Green Chile

6 cups of prepared mashed potatoes, fresh or instant
2 or 3 whole green chiles
2 eggs separated
1/2 to 3/4 cup of cheddar chesse, shredded
1/2 cup small curd cottage chesse

Preheat oven to 375 degrees.
Chop the chiles. Combine the chiles with the mashed potatoes, egg yolks,and cheeses. Mix well.
Beat the egg whites until stiff and fold them in the the potatoes mixture. Pour into a 2- quart casserole and bake for 40 minutes or until browned and puffy.
Serves 8
