Preaheat oven to 350.

2c white cornmeal
1c flour
2tsp baking soda
dash of salt

Mix in large bowl. Add:

2 lg eggs
1/4c veggie or canola oil
2c buttermilk
1 can cream style corn
1 small onion, finely chopped
3/4 cup frozen corn
2 4oz cans diced Hatch green chili/jalapeno, depending on spice preference

Mix together.

Add 2c grated medium cheddar cheese and mix in.

Spray 9x13 pan with non-stick spray. Pour mixture into pan. Sprinkle an additional 1/2 cup of grated medium cheddar cheese on top.

Bake 1 hour. It should be golden brown on top with the edges pulling away slightly from the pan. The middle should still be soft.
