 OFFLINE | Here is the recipe I posted about on the wall. I love trying out old recipes. They remind me of all the cooking and baking my grandmother did while I was growing up. My ultimate comfort food! This recipe is from the 1950 Betty Crocker Cookbook. I like that using honey allows you to use less shortening and sugar than the regular Betty Crocker peanut butter cookies. And they turn out so yummy, my family ate the last batch in two days!
Ingredients:
1/4 cup soft shortening.(I use butter flavored)
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup honey
1 egg
1 1/4 cup flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
Mix shortening, peanut butter, sugar, honey and egg thoroughly together in a large bowl. In a seperate bowl mix together flour, baking powder, baking soda and salt. Add dry ingredients to the peanut butter mixture and mix thouroughly until a dough forms. Chill dough until easy to handle. Approx. one hour. Heat oven to 375 deg. Roll dough into balls the size of large walnuts. Place 3" apart on a lightly greased baking sheet. Flatten with a fork dipped in flour, crisscross. Bake until set, but not hard. 10-12 minutes. Makes about 3 doz cookies |
