Who doesn't love a grilled cheese sandwich??? I layer whole roasted green chiles on my grilled cheese sandwiches. I don't use special cheese...it just depends on what I have in my fridge...I've used a few varieties. Sometimes I'll throw on a few thin slices of ham too. But the green chiles are the highlight of the sandwich...of course!!!

Wonderful!! Reminds me of college days at the Tri Delta House at UNM - every Thursday for lunch we had grilled cheese with green chile & tomato soup. Hit the spot then and still does to this day!!!
