When Chile Monster mentioned grilled cheese sandwiches with Green Chili, I immediately knew I had to head to the kitchen. This is what I came up with.

Multi-grained bread with lots of holding power (this is no wimp sandwich)
jack, colby and provolone cheeses,
sliced green chilis,
applewood bacon AND (wait for it)
vine ripened tomato slices.
Bread brushed with olive oil. Grilled.

Would have been perfect with a bottle of beer but I had to teach tonight.

I'll be revisiting this soon. Maybe sliced avocado the next time.
