Green Tomatillo and Green Chile Sauce by Coleen Nolan Hartwig

I take about 8 or 9 fresh tomatillos, boil them for about 10 minutes or so. Carefully remove the skins and add them to a blender. I then add 2 or 3 fresh garlic cloves, crushed, a handful of fresh cilantro, 4 or 5 Hatch roasted green chili, the hotter the better, also 1 serrano pepper. I blend this all together till smooth. In the meantime, I have slow cooked 3-4 chicken breasts. Shred the chicken and place in a large tortilla with some fresh made quacamole and shredded jack cheese. Roll it up and spoon a generous amount of green sauce over burrito and more jack cheese. Microwave for about 1 1/2 minutes, just until cheese is melted! You can add some sour cream over it! So yummy!
