I make green chili stew that is really good with or without meat. If I want just sauce, I omit the ground turkey but often times just use the meatsauce for everything... over eggs, over burritos, in a bowl with an over easy egg on top, etc.
1 pound ground beef or turkey (you'll never know it's turkey except there won't be bunch of fat floating on the top)
1 soup can size can of diced tomatoes and juice
1 pint roasted, peeled green chili, drained
1 large yellow onion
1 large clove garlic
salt and pepper
additional garlic powder to taste - I use alot
brown the meat
brown the onions until just caramelized
brown the sliced garlic
combine all ingredients and simmer for 30 minutes or so
If you want thick sauce, thicken with alittle corn starch
serve with buttery garlic bread
MMMMM, think I'm gonna go whip some up now!
