let me just preface this by saying you can say a lot of time by going rotisserie and canned broth..
so what i do is go with a whole chicken from the grocery store its just a small to medium one, about 5-6 dollars
In a pot big enough to hold the whole chicken i will put enough water to cover the chicken completely(good time for salt and pepper), bring to a boil, and then reduce to simmer.. and cook for about 45-50 minutes flipping the chicken in the water as needed.
At this point i will use a wooden spoon to press on the leg and breast area if it splits easy then were done.
While the chicken is cooling enough to pull apart (tremendously hot for about 15-25 minutes.. maybe longer) i will strain the fatty bits out of the broth with a strainer.
Add in about 1-2 cups green chile to the broth, if you want to add veg to the broth this is about the time.. i would cook about 10-15 minutes before the dumplings if so

.
For the dumplings use 2 1/4 cups bisquick 2/3 cup milk .. i add green chili to this aswell once mixed, about 1/2 - 1cup if desired..but try not to use a lot of juice because the batter will get too wet.
these need to cook for about 10 minutes.. Ice cream scoop works well to drop these into the broth
obviously this takes a bit of time.. but couldnt be easier.. set it and forget it for the most part, feel free to experiment
