My aunt taught me how to make green chile from my father's side in Pueblo CO, along with homemade tortillas but I never liked the family way of using cubed pork so this is my own version with added spices.
All the ingredients will be season to taste.
First I cook a pound of lean hamburger mixed with hot sausage in a deep pot.
I add fresh chopped garlic and jalapeno
I add onion powder spice and sage spice and if my jalapeno is not hot enough I add crushed red pepper
Once the meat is browned I add flour and then add my half cream and half water and bring to a boil. During the boil I add a combination of hot and mild roasted green chile I usually pick up on my way back to TX from CO in Clayton. I like my chile thick to eat with a tortilla scoop out of a bowl. At this point I will add a can of stewed tomatoes (just plain) and Bay leaves.
I bring down the bowl and simmer for an hour or more until the smell makes me so hungry I'm ready to eat.
In a bowl with cheese and my tortillas or added to a bowl of beans, either way this is my families feel good home cooked home away from home (even my cat used to eat it)

This sounds so good but I have a question if I may what is half cream? And how much of it do you add? and how much water do you add? And how much Bay leaves do you put in it? I want to try and make this for my family, it sounds so good! Thank you so much for posting this!

Those are good questions because I never measure, just used to eye balling it. Based off a large pot using 2lbs of meat I use half, or slightly more, of a smallest carton of half and half creamer, To that I would add 6-10 cups roughly of water and of course the longer it simmers the thicker it will be. With the Bay leaves I'll add 5-7 floating on top. Just trust your instinct and have fun with it because you can not mess it up, if its too thick add more water, if its too thin bring to boil and add more cream and again simmer. Good luck!!
