You are on your own for pie crust, but once you have a crust try this!!!

Green Chile/Apple Pie Filling

3 Tbsp. unsalted butter

1 and 1/2 Cups light brown sugar or raw sugar

1 cup warm water

12 small-to-medium-sized tart apples (go with the green- or yellow-skinned ones), peeled, cored, and sliced 1/4-inch thick(6-8 cups total)

1/2 cup roasted, peeled, and chopped green chiles (while I like hot chile, medium works best in this recipe)

1/2 tsp. salt

1 Tbsp. grated lemon zest

1 Tbsp. vanilla extract

1 Tbsp. cinnamon

1/4 tsp. nutmeg



1 beaten egg + 2 Tbsp. milk, combined in a small bowl, to seal top and bottom crusts together.



Heat the butter in a deep saucepan or soup pot over medium-high heat until it foams. Add the sugar, water, cinnamon, nutmeg, lemon zest, vanilla, and salt. Stir well to combine. Dump in the apples and green chile, stir to incorporate, and cook, while stirring, for 5 minutes. Remove the apple/chile mixture from the pan with a slotted spoon and place in a cold bowl, leaving as much of the liquid in the pot as possible. Over medium heat, reduce the sugary liquid by half, or until it thickens enough to resemble cold maple syrup. Pour the "caramel" over the apple mixture and stir to combine, and cool to room temperature.



Fill your pie, put on your top crust and bake at 425F for about 35-40 minutes.
