Mix together ground beef,cracker crumbs,instant white rice,garlic salt, S and P, 2 eggs,worcestershire sauce(a few glugs) ,steak sauce such as Heinz 57, 1 small can sliced mushrooms drained, a cup or more of cheddar cheese or cheddar monterey jack mix,grated, 1 can diced green chiles drained. mIX together with hands to desired consistency. (you can make this wetter or drier depending on how much rice and cracker crumbs you choose to add.) Shape in to a loaf and bake in a loaf pan sprayed with PAM or some such thing at 375 until done. Usually about an hour. Remove from oven, lay whole green chiles sliced open over the top of the meatloaf. Cover with slices of Jack or cheddar. Return to oven and turn to broil until cheese bubbles. Remove and let sit for a few minutes. (sometimes I add salsa instead of mushrooms.......) depends on my mood and what's in the pantry.

I usually use about 2 lbs of ground beef......... you can omit the rice if you want. Sometimes I just use the crushed saltines. Usually half a sleeve,
