I am going to try to help you to make them, but it's a by FEEL so bear with me.
For the shell you will need:
Masa you can by the bag of it at Walmart just look for the corn masa.
I dump about half of the bag into a large bowl.
Add warm to hot water( here comes the tricky part)
add enough water till the dough feels like just a bit like play dough. If it is too dry add a bit more water. Take a a ball of the dough and work it with your hands til it's a flat patty of a quarter inch thick by about 4 inches diameter. Have 2 damp tea towels on the counter to hold the patties to keep them moist. Make the patties first and then fry about 5-6 at a time.
Have a cast iron skillet hot with oil ready for frying. enough to just cover the corn patties.fry on one side until golden brown flip and same on the other side.
drain on paper towels. Do not touch these as they will be extremely hot.
For the filling I use ground beef brown about 1-2 pounds and drain.
Then add chopped onions about 1 small or half a large, chopped green New Mexico Chilies, again this is as you want it so 5-6 are good. oregano to taste and cumin.
I add a small diced potato to the filling just some thing my husbands family does.
water to cover and simmer. Taste add salt and pepper and a bit of red chili powder.
The Gorditas should now be cool enough to handle, so carefully with a knife make a slit on the top about half across the top and make like a pocket of the shell. I take out any excess masa and fill with the meat filling. stand these up in a baking dish top with grated colby jack cheese. Place in a 350 degree oven for about 25 minutes or until the cheese melts.
Serve with re-fried beans and some people like Spanish rice, I don't so I serve Fideo.

Well as I said it's a FEEL dough you learn with time how it should feel..My husband was born in Mesquite but not many know where that is so he just says LC. Hope they turn out for you.

Thanks for posting. I was born and raised in Deming. I miss New Mexico and the authentic Mexican dishes. I never did learn how to make gorditas. |
