Ghost Salsa

Recipe makes One-Gallon

Ingredients:
2 White Onions – finely chopped
1 Ghost Pepper (Bhut Jolokia) - seeded (or 2 Serrano Peppers – seeded)
1.5 small (11oz) cans El Pato – yellow label
Mexican Hot Style Tomato Sauce
1.5 small (11oz) cans El Pato – red label
Mexican Tomato Sauce with Jalapeño’s
14 Roma Tomatoes
6 Tomatoes “on the vine”
1 can (15.25oz) Yellow Corn
1 can (15.25oz) White Corn
1 large bunch Cilantro (or 2 small bunches)
Stem In – finely chopped
Leaf In – coarsely chopped
1/3 cup Lime Juice
Nellie ‘n Joe’s Famous Key West
2/3 Tbsp. Sea Salt (non-iodized)

Mix all ingredients into a one-gallon bowl

Serve with your favorite tortilla chip
(We suggest Flour Tortilla Chips)

Tours of Old Town
We entered this in Old Town's Salsa Fiesta a few years ago... the Mayor loved it! We chopped everything by hand (tomatoes too) for 120 gallons worth!
