I have fond childhood memories of getting frito pies from downtown Santa Fe at the woolworths.The kind that came made in the small personal size bag of fritos. Made by sweet old ladies that belong in every elementary lunchroom.
Fresh red chili sauce(posted a recipe earlier today)
Frito brand chips
pinto beans
salt/pepper
garlic powder
dried onion/fresh onion
basil
paprika
avocado
tomatoe
cheddar cheese
thick sliced uncured bacon
lettuce
First start off with a bag of pinto beans. Sort them, toss out the black or bad beans, be careful to check for any other debris. Then rinse your beans and put them in a large pot. Cover the beans with enough water to cover them twice over. Turn flame on low.
Now for the seasoning. I start with 1T oregano, 1/2tsp basil, 1tsp garlic powder, 1tsp sea salt, 1tsp. dried crushed onions(I imagine onion powder would work just fine)and 1/2tsp freshly cracked pepper and a sprinkle of paprika. Cover beans and let simmer on medium heat for 45 min.
Next you get 2 or 3 slices of bacon. Cut them vertically into pieces around a centimeter wide. Add these to your beans and crank up the heat to high.
Periodically stir the beans and when you approach 45min after adding the bacon pull out a spoonful and give them a taste. Depending on how much water you added you may need to add more salt or garlic. I generally use garlic salt at this point to make things easier. If you love pepper nows the time to add more as well.
Some people prefer their beans to be a bit on the firm side, me on the other hand like my beans quite soft (perfect for refrying them later for your bean burritos). After you have added your seasoning to taste check them about 15min later. They should still be on the firm side if you like them softer then continue to check back every 5min or so til theyre just how you want them.
Now you need your sides
Sliced avocados
chopped tomatoes
thinly sliced lettuce
chopped yellow onions
and the most important part your sharp cheddar cheese
Place your Fritos in the bowl about halfway, add your beans(with a little of the bean juice as well) then top with chili. Start off with your cheese so it melts into your pie and then pile on the rest of your toppings. Enjoy!!! |
