The smaller grey squirrels with a white underside are the most tender and are preferred for this dish.

•Frying Pan
•Cooking oil
•3 Bowls
•Flour
•Egg
•Cream of mushroom soup
•Creole seasoning
•Garlic powder
•Black pepper

step 1
Cut squirrel in three pieces
1) Front quarters
2) Center section
3) Hind quarters
In bowl # 1
Place these squirrel pieces in a bowl of ice water.

Step 2
IN bowl # 2
Mix egg and cream of mushroom soup with a fork


Step 3
In bowl # 3
Mix flour, Creole seasoning, garlic powder, black pepper,
Step 4
Place cooking oil in frying pan. Frying Squirrel in much like frying chicken, oil must be hot but careful not to cook to fast.

Step 5
Remove squirrel from ice water and shake dry
Then place into bowl #2 mix until well coated
Then place into bowl #3 mix until well coated
Then place into frying pan
Cook until golden brown.

it depends on how many people and how much each person can eat. This recipe is more about the batter kinda like the mix you would use for chicken or fish you need to make as much as you need depending on how much meat your going to fry.
