I've never measured but I will give you approximate measurements. 5 cups all-purpose flour, 1 1/2 teaspoons salt, 1 1/2 teaspoons baking powder, 3 Tablespoons lard or shortening, 1 1/2 - 2 cups warm water. Mix the flour, salt, and baking powder together in a bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the warm water mix until the dough comes together. place masa on a lightly floured surface and knead a few minutes until smooth. Preheat a large cast iron skillet over medium heat. Let masa rest for 5 minutes. Divide the masa into balls and cover with your bowl so the masa don't form a dry skin. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Use a paper towel to rub a small dab or shortening in the pan. Place tortilla into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Continue rolling and cooking the remaining dough. Message me if you have any questions. |
