I am orginally from NM, but currently living in Alaska. I am not coming home for the holidays, so I need a really tasty pasole recipe...

2-3 large cans of hominy if you can get your hands on (nixtamal) it would be better.
3 pounds of stew beef chopped up.
1 whole white onion & 1 full clove of garlic.
garlic salt and pepper,bay leaf,beef bullion can be added if desired.
4 quarts of water
boil everything together for 3-4 hours.
1 hour later after water boils add red chili
add side dishes like chopped green onion,oregano,cilantro,and plenty of lemons.

question #1 you can use either or according to your likes
question #2 its a raw form of hominy and it takes longer to cook and it smells the whle house delicious!!! it's usually in a bag by the meat department.
so your from new mexico what part?

I make Posole quite often. While I don't use any tomato products, it still tastes good and my New Englander husband loves it!
We live in upstate New York and I hae a heck of a time finding posole here. When we travel to New Mexico or Colorado, I buy as much as I can to either ship or carry (on the plane) back to NY. Sure miss the food and the culture. I'm a native born New Mexican - love the food!!!

Hi Evelyn! My son was stationed in upstate NY, he lived in Watertown. I used to send boxes of product, chili, what ever I was able to send so they could make mexican food. The New Mexico chili pods are so light and last quite sometime. My husband is from New Mexico, we go there once a year and also bring as much of New Mexico product as we can. His family also sends us chili by mail, I Love it.. Thank you for sharing
