Any recommendations for drying peppers? I saw someone on tv take dried whole peppers, dip them in caramel to coat, cool, then dip them in chocolate, and cool. Looked tooooo good not to try

Are you talking about red or green? They both can be dried the same way, strung in a ristra. You can't string the fresh green peppers to packed together like you can the red. They have to be roasted and peeled and that brings out a lot of moisture than can cause mold if they don't have air in between to keep them dry. My grandmother would dry the green peppers in thin strings about a foot and a half long, each. You could dip a shoe in caramel and chocolate and it would look delicious but if you've ever eaten even a bite of a fresh red or green chili pepper, it easy to see why the green has to be dried or roasted, first, and the red has to be dried and then ground up! |
