 OFFLINE | Does a fish need to be put in tank/ staying in it for keeping on status "gained" at the collections table? Or am I free to sell any fish from collections which is already reached level 5?

Hello Marta,
It is not necessary to keep all collectible fish - grow and sell them as regular fish from a store. Predators will not eat those fish. As soon as a collectible item is won in the Wheel it will count in the collections.
We have photo album in the group called Achievements, take a look at it. It shows how to do some tasks in the game.
