Divide 8 oz shredded Monterey Jack (or your favorite cheese) and fill 10 chiles with it. Put the chiles in a 8x8 baking dish. Beat 2 eggs, 1 cup milk & 2 Tbls flour and pour over chiles. Sprinkle more cheese over the top and bake at 350 for 35-45 minutes. You can also "cheat" by opening up the chiles and laying them in the dish, sprinkle with cheese, add another layer of chiles and pour the egg-milk-flour mixture over and sprinkle with more cheese. Same baking time & temp.
Of course, this may not be enough, so double the recipe and make it a 9x13 pan!! |
