Yorkshire Moggie Cake

How to make Yorkshire Moggie cake:
Sometimes spelt "Moggy", this cake comes from Yorkshire and contains delicious black treacle which adds a liquorice-like flavour.


Ingredients
1lb plain/all purpose flour
2 teaspoons baking powder
8oz caster/superfine sugar
8oz black treacle
6oz butter
1/4 pint milk
1 egg
(see measure conversions for more information. find it at Everything else)

Method
- Sieve the flour and baking powder into a bowl and stir in the sugar.
- Warm the treacle, butter and milk together until melted.
- Stir into the dry ingredients, and beat in the egg.
- Put into a greased tin.
- Bake at 170oC/325oF/gas mark 3 for 1 hour.

Corned beef hash

This dish is so comforting on a cold winter's day and is very simple and quick to do. It is delicious served with grilled tomatoes, peas or baked beans!


2-3 large baking sized (or 4-6 roasting size) potatoes
1-2 tins of corned beef (depending upon how much corned beef you like to eat!)
1 tin of baked beans
1 large onion
small amount of oil
pepper to season
grated cheese

Peel the potatoes and cut into cubes of about 1 inch (2.5cm). Boil the potatoes until almost cooked though, and drain.

Open the corned beef and cut large chunks, like the potatoes.

Finely chop the onion and brown in a pan with a little oil; add potatoes and brown together for 5 minutes. Add corned beef and season with pepper if required.

Pour the baked beans into a casserole dish, then add the potato & corned beef mix.

Sprinkle over grated cheese and bake in the oven until the cheese is bubbling.

SERVE!  


Variations

If you don't like corned beef, you could use left over cooked meat or a tin of drained tuna instead.

Baked beans are surprisingly good for you especially if you choose the ones without added sugar and salt.

There's approximately 105 calories in every 100g of baked beans, and they also provide a rich source of protein, as well as iron, B vitamins, folic acid and fibre. Baked beans are low in fat and contain no cholesterol.

The tomato sauce covering baked beans is also a good source of lycopene, another powerful antioxidant shown to help prevent heart disease and prostate cancer.
