here is one that I do camping for the boy scouts I use a greased cast iron dutch oven over hot coals
heat a large dutch oven over your campfire coals (12-14 inch lined with foil and greased)
brown two pounds of choriso
while the sausage is browning...
one dozen eggs beaten with about a cup of milk
add to the eggs 5 slices of bread torn into pieces
salt and pepper
two or more cans of hatch green chiles, but at least one hot and one medium
one small onion medium dice
garlic (how much ever you like...3-5 cloves minced)
pour the eggs mixture over the choriso
top with 8-12 ozs of shredded cheese (on boy scout trips, it was colby but you can fancy this up as much as you want)
cover
place the oven on a flat bed of coals
place about 6 hot coals on the lid of the oven and walk away
do not open, peek, stir or in anyway molest the oven and its contents
return in 30-40 minutes
when the top of the egg is golden and browned...
serve with salsa
note: there may some over cooking on the bottom due to fluctuating internal temperatures but hey, this is camping
This beats the heck out of cold poptarts when you are winter camping
oh yeah do not use "matchlight charcoal" with a dutch oven...they burn way too fast |
