My vote is for High Plains Drifter.  One of Eastwood's earlier directing attempts, I think the film successfully pulls upon the talent of the actors and an ideal, eerie setting on the north shore of Mono Lake (on the other side of the Sierra Nevada from Fresno) to create an ethereal feel.  There are also several subtle details hidden throughout the movie for those with an appreciation for detail (ex. Eastwood flinches when he hears a whip crack when he first rides into Lago).

Oh wow!  Great topic!  =)

I guess my all time favorite is High Noon with Gary Cooper. Story of a man wh does the right thing...not coz he wants to do it...bu because its the right thing to do.  Good story about honor and character.  (Katy Jurato and Princess Graceare nice touches too).

Others I love:

Magnificent Seven (based othe Seven Samurai).
Sons of Katie Elder
Rio Bravo
She wore a Yellow Ribbon
Fort Apache
The Ox Bow Incident
Butch Cassidy and the Sun Dance Kid
The Wild Bunch (LOVE this one).
Lonesome Dove
Shadow Riders
The Long Riders
Pale Rider
They died with their Boots on (Errol Flynn).
HONDO!!!

Oh man, there are so many.  You really picked a good subject for me.  I love Westerns.  =)

Do I have to pick one??? Its kinda a tie between all of the "Man with No Name" trilogy. There may be a slight lean to The Good, the Bad, and the Ugly. Anyway I have seen all of them hundreds of times and watch them every single time I see them on. They are the "Grandfathers" of the modern antihero we see in most movies today.

Like you, I love Clint. It is hard to put those three movies at the top when you also have The Outlaw Jose Wales and Unforgiven(which is prolly the absolute best written western ever).

Others right there at the top are True Grit (both versions are awesome), The Shootist (John Wayne's last and finest), Open Range, Dances With Wolves, Magnificent Seven, and of course.....and this is cheesy.....Young Guns was great.

'Young Guns' was a fun western!  And I forgot one of my all time favorites....'Tombstone'!!!  Kurt Russell and Val Kilmer were terrific in that movie.
