Hello Robul.
Task Collector - to collect (to win) a collection in mini-game Wheel of Fortune. List of all collections can be found at the top right corner of mini-game called "My Collection". Collectibles on the wheel marked with multicolored fish.
As soon as a collectible item is won in the Wheel it will count in the collections. So it is not necessary to keep all collectible fish - grow and sell them as regular fish from a store. Predators will not eat those fish.

OFFLINE | Is the only way to gain the items/fish in the new "collections" task to spin the gift wheel? I do not see all of the new "collections" represented on the gift wheel so I am confused. |

Take a look at our photo album "My achievements". Picture called "Wheel of Fortune". It is well explained how the wheel is working.
