I use a 10 spice rub for all my BBQ or smoker meats. I use home grown/dried chilies, and put them thru my coffee grinder.
1 tbs cumin
1 tbs smoked paprika
1 tbs granulated garlic powder
1 tbs granulated onion powder
1 tbs chili powder
1 tsp cayenne pepper
1 tbs dried ground red chili peppers
1 tbs brown sugar
2 tbs kosher salt
1 tbs black pepper
1 tbs white pepper
I put the spices in a plastic bag, and the meat, then shake it like a shake and bake, until well coated. Then let it sit overnight if possible. Then onto the grill. |
